A fine, traditionally steamed sencha from Shimizu, created by Yamamoto Kengo, a specialist of organic tea. His great mastery of tea farming and processing enable him to create very mellow, pure Japanese teas, despite the difficulties intrinsic to organic techniques.

The sweetness is in this case closely related to the cultivar, Oku-Yutaka. The liquor has great depth and purity, but no tannin. It is very fragrant, with soft, subtle aromas of flowers and almonds.

This tea is easy to understand, but its fragrance and liquor are nonetheless sumptuous, and the opulence extends into the aftertaste.

Steeping method
  • Quantity of leaves: 4 g / 1.2 tsp
  • Quantity of water: 70 ml / 1/4 cup
  • Water temperature : 70°C / 158°F
  • Steeping time : 70-80 seconds
