Kawane is one of the most famous mountain tea producing areas in Shizuoka and even in all of Japan. At 600 metres (almost 2000 feet) in altitude, the Tsuchiya family, which has won many awards in national competitions, grows and finishes very high quality teas, using the least possible fertilizer and pesticides.

This fine mountain sencha is produced from the Oku-hikari cultivar, a late variety from a cross of Yabukita and Cy225, a Chinese cultivar originating in Hubei.

The liquor has rich, unique fragrances. It is mellow, dominated by notes of aromatic herbs and spices. As it cools a little, this Japanese green tea also offers aromas of browned butter, and notes recalling coconut.
In the mouth, the first attack is round, both green and slightly sweet, and then it yields to complex flavours enhanced by a touch of astringency, but the liquor develops a lot of umami mellowness in the aftertaste.
It is a sencha that shows great length, with epicurean flavours, including fruity notes after the second infusion.
All in all, it produces liquor with no heaviness: light but full and stimulating. The aromatic palette of this sencha is of exceptional depth and variety. Despite the entirely unique aromas and strong personality, the whole remains highly balanced and of great purity.
