The town of Wazuka is the largest “Uji tea” production zone, in other words, the largest tea-growing area in Kyôto Prefecture. A lot of sencha and kabuse-cha is produced there. This sencha by Mr. Minato was shaded for around 6 days. The Tsuyu-hikari variety is a cross between Shizu-7132 and Asatsuyu.
At first, we notice the sweet green fragrance specific to shaded teas. Next, in the mouth, the beginning is very delicate, full of umami. The fragrances behind that sweetness are fruity and ripe. It is a very velvety tea that remains quite delicate.
Subsequent, warmer, infusions reveal a sencha with a light, fluid, more refreshing liquor, containing vegetal and floral notes.
This is a tea typical of Uji senchas, light with no astringency, and in which umami appears clearly but with no heaviness, along with the delicate aromas specific to the Tsuyu-hikari cultivar. We recommend a strong infusion.
