Wazuka, in the southern part of Kyôto Prefecture, stands out among “Uji tea” producing areas owing to the quality of its unshaded teas. This sencha by Mr. Tsuji, specifically from the Harayama sector, is made from the famous Yabukita cultivar, the most widespread and representative of tea varieties in Japan.
The bewitching fragrance of the liquor is not misleading. There is a subtle alliance of aromas of green asparagus and nuts on a mellow, slightly sweet texture: this is a very good, typical Yabukita. The very green, fresh aromas of this Uji tea are characteristic of Yabukita, but also representative of good senchas, and are all the more pure when the roasting is minimal.
In the mouth, sweetness and astringency are present in a harmonious manner. The mellowness continues in the aftertaste and in the length, while the astringency delivers a stimulating, refreshing touch: just perfect. The light astringency of this tea is comfortable, really quite delectable, though it can be eliminated by relatively cool infusion. However, it is specifically with hot water that all the qualities of this sencha come out.

This Japanese green tea is both strong and subtle. It displays the qualities of Yabukita and the natural environment of Wazuka in an exemplary sencha that is nonetheless neither boring nor academic.
