The Tsuchiya planation in Kawane, perched at over 600 metres (1970 feet) in altitude, is one of the most renowned in the famous mountain-tea producing area of Shizuoka. Mr. Tsuchiya makes his tea there, in a miniscule factory on a line that has an equally tiny capacity.
The very pure liquor of this sencha gives off a fascinating, intense sweet scent that recalls the fragrance of forest undergrowth. In the mouth it is first very delicate, very silky, and then blossoms into mellow rich aromas, a good balance between sweetness and lush umami, slightly fruity, with flavours that almost recall confectionary. This sencha has exceptional presence in the mouth while remaining extremely pure, from the beginning to the end of tasting: everything is marvellously fluid. There is no astringency, and the sweetness remains in the mouth for a long time, delicious and perfectly balanced, very present but not excessive.
This mountain sencha from Kawane is a model of its kind, with richness and balance that are possible to obtain only with Yabukita. A Japanese tea delectable to drink without moderation.
