This kabuse-cha is a tea that has been harvested by hand from unpruned tea trees that were shaded under an arbour, as for gyokuro. Gokô is a shaded tea cultivar, much used for gyokuros and kabuse-chas in Uji, but very unusual in Yame, where sencha cultivars are preferred.
Owing to the shading and growing method, Mr. Takaki has succeeded in creating a truly premium kabuse-cha, closer to gyokuro than to sencha.
Upon infusion, the scent is fresh, a subtle combination of ripe fruit and umami. In the mouth, the liquor is very mellow, full, but also velvety. The aromas of ripe fruit and aromatic herbs remind us that we are in the presence of the Gokô cultivar. The aftertaste is sweet and long, but with very subtle umami.
This tea from Yame is an assertive kabuse-cha, but it is also very delicate, and there is no excess of sweetness to hide the wealth of aromas.

  • Water temperature : 60°C / 140°F
  • Brewing time : 80s
