Ryôgouchi is a famous tea-producing area in the mountains of Shimizu (Shizuoka). This is where Mr. Katahira works with passion, growing no fewer than 18 cultivars (varieties) of tea.
This is a sencha made from the Asatsuyu cultivar, which is relatively unusual in Shizuoka.
The sweet, vegetal fragrance of the leaves is very slightly floral and will immediately make enthusiasts think of the aromas of the Asatsuyu cultivar. Infusion brings out clearly the mellow scents of beans so typical of this cultivar. In the mouth, these characteristics are also present, and the liquor is fine and balanced, without the heaviness or excess of umami that is found in the very broken Asatsuyu fukamushis from the south of Japan. This is a fine, classically steamed mountain tea, and it is the fragrance that is emphasized. Nonetheless, in the aftertaste, a deep mellowness can be sensed, a mixture of umami and the aromas typical of Asatsuyu.
