Here is a Yabukita from the Tsukiji estate in Tamakawa, and the Yokosawa factory now presided over by Mr. Kosugi Yoshiki.
The dry leaves are magnificent. Their fragrance is dense and sweet, with spring fragrances accompanied by light notes of coniferous trees and deep forests. The liquor, of a captivating limpidity, gives off sweet scents with light notes of candied fruit, woody fragrances and a touch of roasting. In the mouth, this tea initially seems light and fluid, but it develops a wonderful wealth of aromas and great body. Despite the general mellowness, there is no excessive umami, and a light touch of astringency brings depth and balance to the very full, round whole. On the palate, we can detect sweet, woody aromas, while the powerful aftertaste is divided between umami and vegetal flavours.
This sencha, which has the felicity to ally power and refinement, produces intense pleasure, and is very refreshing as it flows so fluidly down the throat. Its length in the mouth is especially satisfying. Finally, this is a tea that we want to come back to right away, which we will not tire of, in short, a great Yabukita, which does honour to the Tsukiji estate.
