Mr. Morizono Ichiji and producer Mr. Koyanagi Mitsugi developed the Fuji-kaori cultivar in Fujieda from a seed resulting from crossing Yabukita with the variety of Indian origin, Inzatsu 131. The first producer to adopt this variety was Mr. Yamamoto Yûji, also from Fujieda. He made this Fuji-kaori sencha.
While it is in kama-iri cha that the special fragrances of Fuji-kaori come out clearly, this sencha showcases another property of Fuji-kaori: its strong amino acid content, responsible for the umami mellowness of the tea. Thus, this sencha allies the strength in the mouth of steamed green teas with a light floral fragrance specific to “inzatsu” teas. This sencha also has very green aromas.
Depending on the infusion method, this sencha from Fujieda can show very different faces. For example, an initial slow, lukewarm infusion brings out powerful umami, then, if the second and third infusions are short and hot, we find the floral fragrance, along with astringency in the mouth, although the umami does not completely disappear. The powerful length in the mouth develops into great sweetness and umami.
