The name Satô Hiromitsu is very well known for the surprising golden-leaf “Kogane-midori” sencha, but he also produces other very interesting teas, such as this Ômune cultivar sencha, which may seem to be the exact opposite of Kogane-midori. Ômune is a very old cultivar, grown very rarely, and developed from a “zairai” tea tree. The leaves are beautiful, finished simply, with some stems still remaining.
This sencha develops a pleasant fragrance that is at once vegetal and mouth-watering, embellished with a subtle touch of vanilla. The fragrance is captivating, warm, with sweetness that is all the more surprising since this tea is only lightly roasted.
The impact in the mouth is powerful, beginning with a light touch of astringency, and then a sweet, delicious impression, a little mineral, followed by a powerful aftertaste, with mellowness split between sweetness and umami. As it cools, this tea also has flavours evoking damp earth. It is wonderfully long in the mouth.
From one infusion to the next, we discover a tea that is much richer than it seemed at first. Its power comes from the beautiful land of the Ôkawa and Warashina mountains.
