In Ashikita, in Kumamoto prefecture, Mr. Kajihara produces kama-iri cha, but also, with a great deal of success, excellent black teas in the Taiwanese style.
His Benifûki is remarkable, but this Kôshun is also very interesting. Kôshun is a cultivar for green tea that is found essentially in Shizuoka, but which has very great aromatic potential for black teas and semi-oxidized teas.
The fragrances of this black tea from Kumamoto are in the spicy-sweet range, and, at first, strongly evoke candied fruit, apricots and quince. Next, there are the sweet aromas of bitter almonds, which seem very closely linked with this cultivar.
It is a light black tea, with very discreet astringency, but in the mouth we find the flavours of candied fruit, as well as warm impressions of sweet spices and ginseng.
A black tea that we recommend making strong and enjoying through multiple infusions.
