Z1 (“zed one”) is an extremely rare cultivar that was developed in the Shizuoka research centre in the 1970s. Although it has many qualities as a crop, it is also a cultivar that is very hard to work with, so it has never been registered officially.
Mr. Tamura, 89 years old, grows this Z1 on a very steep slope at around 250 m (820 ft) in altitude, in the Minami sector of Wazuka. It is a sencha that has been shaded for five days.
In the first infusion, this sencha has a mellow, sweet fragrance that is fresh, and contains a touch of lemon.
The initial attack is light, but then rich, sweet aromas come into the mouth, with lively notes of pine, until, finally, a subtle umami appears. The following infusions have no distracting astringency, but play on even richer, fruitier aromas and fragrances. In the nose, there are nuances of orange and lemon grass, with a slightly floral impression. The aftertaste contains peach and orange.
This is a surprising sencha, very different from most of that produced in Uji. This Z1 contrasts dense, rich aromas and fragrances with a fresh, energizing nature.
