Just to the west of Shizuoka, Fujieda is known for its Asahina gyokuro, but also for the highly aromatic Fuji-kaori cultivar. However, the young producer, Mr. Ikeda, uses yet another cultivar with an atypical fragrance for this semi-fermented tea: the famous Shizu-7132.
Wilting and light oxidation bring out the sweet and lemony aromas, evoking Japanese sweets made with pickled cherry tree leaves. There are also creamy aromas and scents of frangipane and rose.
This tea, which is produced using methods close to those employed for Chinese Oolong tea, takes advantage of the aromatic nature of the Shizu-7132 cultivar, and is present in the nose in a way that is more obvious than in the case of senchas, in other words, steamed green teas. In fact, it is a tea that expresses itself above all through its fragrances and in retro-olfaction. In the mouth, this 7132 is light, fluid, with delicate, subtle aromas.
