Wazuka is the largest “Uji tea” producing area in Kyôto Prefecture. Although gyokuro and kabuse-cha are also grown, it is traditionally a sencha-growing area. However, given today’s trends in Uji teas, true full-sun senchas are rather rare there.
This tea, made from the Yabukita cultivar in the Shirasu sector, is a genuine unshaded sencha.
The nose is floral and gives a tropical impression, green and very deep. In the mouth, right from the first taste we are struck by the strength of the umami, which then develops lastingly on the palate. Yet, in the background there is still an impression that is profoundly floral and green. For an unshaded tea, the mellowness is surprising, but there is no heaviness and this tea is very elegant, quite different from tea in which the umami comes from shading. The subsequent infusions remain in the same register, while the umami becomes more discreet and gives way to a feeling of even greater freshness and fluidity, until, finally, light citrusy scents begin to come out.
With no pronounced astringency and good presence in the mouth, this sencha remains very balanced. This is a simple, traditional tea, yet it is especially efficient. A marvel that will enthrall lovers of pure, classical senchas.
