The village of Yabe is one of the famous places in the Yame mountains. There, at around 600 metres (2000 feet) in altitude, Mr. Harashima produces pesticide-free tea. In accordance with the custom in Yame, he usually uses shaded leaves, but subjects them to lighter fukamushi steaming.
However, for this sencha, he uses hand-picked Yabukita variety leaves that have been shaded for four days onlym but the steq;ing is very short. They are processed using methods close to those for competition teas, thereby obtaining superb deep green, scintillating needles.
Thus, although this tea does not offer any special surprises, it is a very high quality sencha, with all the qualities of the great classics. The liquor is fresh and light, but also intense. It has very pure, well-balanced umami. There is some astringency, but only a tiny touch.
The aromas tend above all towards freshness and greenness, but they are not really vegetal. In short, this is a style of tea that is rarely found in Yame: a tea for those who love simplicity and refinement. But not only: this is a sencha that can also be prepared using a small quantity of rather hot water. That produces a much more intense liquor, with more umami, of course, but also a stronger sweet scent. Even prepared in that manner and despite a more tannin texture giving it personality and charm, this tea has very little astringency.
