Along with Hon.yama and Kawane, Tenryû is one of the three major mountain tea growing areas in Shizuoka. In Tenryû, a wide range of ancient cultivars with strong personalities are grown, though of course on small farms. The young producer, Suzuki Shôgô, is developing the marvelous potential of the diversity tea tree varieties.
Although it is used less and less, Sayama-kaori remains a classical Japanese tea cultivar. Originating in Saitama Prefecture, it is known for its characteristic, slightly unusual fragrance.
The leaves of this mountain sencha announce the colour, with their captivating, sylvan, slightly woody scent, which is a sign of this Sayama-kaori variety.
The infusion’s fragrance is woody, invoking wax, with a stimulating background tending toward the floral.
In the mouth, we are immediately charmed by the fluidity of this Japanese green tea, but also by its very aromatic nature. The floral scent in the nose becomes a special fragrance that is both flowery and alcoholic, but sweet and light, with no excess. The next stage is a feeling of mellowness along with light umami.
The following infusions are free of astringency, and bring out a slightly more vegetal, fresh touch, while the liquor always remains airy and light, but aromatic.
In this fluid, refreshing sencha, the typical aromas of Sayama-kaori appear clearly, yet not to an excess.
