Uji-midori is a cultivar developed in Uji, selected from indigenous local tea trees. Like the majority of Kyôto cultivars, it is very rare to find it elsewhere and, with its special aromas, it is, in the end, relatively unusual in Uji also.
This is a variety considered to be for shaded tea, and in this case we have just that: a kabuse-cha that was shaded for 20 days.
The umami is immediately very present in the mouth, but it is not overpowering. One’s attention is instead turned toward the extremely delicious creamy, floral aromas and fragrances of this kabuse-cha. Always creamy, these aromas change for the better over the course of infusions, becoming even more floral and sweet in the second, and also recalling lemon in the third.
Although it is rich and dense, this kabuse-cha is neither too thick nor heavy. The umami, naturally present in a tea that was shaded for such a long time, does not play the main role here.
The aftertaste delivers the vegetal aromas typical of shaded teas, which produces a refreshing sensation after the mouth-watering liquor.
This is a kabuse-cha that shows the characteristics of the Uji-midori variety in the best light.
