Umegashima is one of the most remote zones of the Hon.yama tea-producing region in Shizuoka. Mr. Koizumi produced this sencha without chemical pesticides or fertilizer in Nyûshima, in a garden along a riverbank at 400 metres (1300 feet) in altitude.
It is a garden where Yabukita cultivar tea trees grow alongside old indigenous “zairai” tea trees.
 Here is this tea garden’s Yabukita sencha, although Thés du Japon is also offering its “zairai” sencha, in very limited quantities.
The leaves already have a bracing scent of pine, humus and damp forest undergrowth.
After infusion, there is a rounder, sweet fragrance in the nose, along with a slight milky scent, as well as notes of hazelnut against a background of pine. The bracing character of the fresh leaves comes out again in the mouth, in combination with very light umami.
The following infusions place greater emphasis on the bracing, fresh aspect of the fragrance, also with notes recalling perfume.
This is a rich, complex sencha, but it is also fluid and refreshing: testimony to the very fine land in Nyûshima.

  • Quantity of leaves: 4 g / 1.3 tsp
  • Quantity of water: 70 ml / 1/4 cup
  • Water temperature : 80°C / 176°F
  • Steeping time : 60 seconds
