Hoshino Village is one of the most prestigious tea-producing areas in the mountainous region sometimes referred to as “Oku-Yame”. In Hoshino, as in Yame generally, gyokuro is produced, but also and above all shaded fukamushi senchas.
The tea by Mr. Takaki that I am offering you is a rare unshaded sencha, which provides a more faithful mirror of the Hoshino Village land, where the mineral-rich earth has something in common with that of Tenryû and Hon.yama. Moreover, it is a tea made from the Oku-hikari cultivar, a cross between a Japanese cultivar and one from Hubei in China.

  Although this tea tends toward very fresh, rather vegetal nuances, its fragrance is sweet, evoking cooked potatoes with notes of flowers and aromatic herbs.
The initial effect in the mouth is a little astringent, but followed by a strong, elegant impression of umami. This contrast is characteristic of Oku-hikari. The camphor and menthol notes are accompanied by a discreet aftertaste of green beans.
This unusual unshaded green tea from Hoshino is an incisive sencha, but it also has a very mellow side. It is powerful, has fine aromatic depth and great length in the mouth.
