“Tea from Sayama” refers to teas from Saitama Prefecture, just north of Tokyo, with production centering around the cities of Iruma, Tokorozawa and Sayama. Although texts dating back to the Middle Ages show that teas (then known as Musashino and Kawagoe teas) were already being grown in the region, it was when the export market expanded during the Meiji period that Sayama’s tea industry underwent major growth. Today, the prefecture is dominated by fukamushi sencha, and there is a very active cultivar development sector as well as many young producers.

Oku-haruka is one of the most recent cultivars from Saitama: it was made public only in 2013. It is a late cultivar of which much is expected in the future because it contains a high proportion of coumarin – the molecule responsible for the cherry leaf scent, which is also found in the famous Shizu-7132.
This is a very broken fukamushi, but it is strong and holds up well through at least three infusions.
The nose is green and fresh at first. In the mouth, there is a fine balance, revealing a fukamushi that is both characteristic and elegant. Yet, in the aftertaste there are more unusual fragrances evoking bitter almonds and, indeed, a highly nuanced marinated cherry leaf effect recalling sakura-mochi. It is in the second infusion that this special aroma appears more strongly, with mouth-watering sweeter nuances, while in the mouth the liquor is more incisive, with a light touch of tannin.
The aftertaste is intense, aromatic and sweet, with exceptional length.
While its fragrances are not exactly like 7132, those of this Oku-haruka are nonetheless very characteristic and rich, resulting in a fukamushi that is full of personality yet very representative of Sayama tea.
