Along with Sayama and Ashigara, Sashima, in Ibaraki Prefecture, is one of the three “great” tea-producing areas in the Tôkyô region.
Production in the region is centred on fukamushi sencha, and the producers, although they are not numerous, are young and dynamic. A wide range of cultivars are grown there, and, given the strong risk of frost in the area, the harvest is rather late, as it is in the neighbouring area of Sayama. The steaming was halfway between futsumushi and fukamushi.

This sencha is made from the leaves of tea trees grown from Yabukita seeds. Technically, the trees are “zairai”, that is, indigenous varieties, in that they are not identical cultivars grown from cuttings, but are all from seeds. However, since the seeds are all from the same cultivar, the plantation is more uniform than a classical “zairai” garden.
The tea trees are all around 50 years old, which is unusual in Japan, where plantations are generally renewed after 30 or 40 years. This garden was grown from Yabukita seeds at a time when there was a strong tea boom and it was sometimes difficult to obtain enough cuttings of this star variety.
Mr. Yoshida has used the leaves to produce a very classical sencha, with the characteristic balance between initial astringency followed by a sweeter impression in the mouth, along with umami and a very mellow aftertaste. Initially, the fragrance is green, with notes of fresh grasses, followed by floral scents, then woody aromas and a touch of cooked beans.
There is more tannin in the second infusion, but also a very strong, rich, sweet fragrance, which is again woody and very mouth-watering.
These tea trees, grown from Yabukita seeds, give us a powerful, rich sencha, very stimulating, both in the mouth and in the nose, with a superb fragrance.
