Here is a very fine sencha from the Tawaramine sector of Hon.yama.
It is made from the Oku-hikari cultivar, a variety grown from a seed from a Chinese tea tree in Hubei. While this cultivar is not always easy to identify, it nonetheless has very specific characteristics.
The strong roasting of this sencha from Hon.yama has brought out Oku-hikari’s characteristics especially well.
This green tea has a rich, intense nose, with highly confectionary flavours recalling sweet toasted bread, spices such as cinnamon, but also some peppery notes.
In the mouth, the attack is velvety, with a minuscule touch of astringency that brings depth to the very mellow liquor. The whole is very round and sweet, with moderate umami.
The second infusion brings out more marked astringency, but the rich, warm aromas of sweetness and spice remain.
This sencha reveals Oku-hikari in its best light.

Brewing method
  • Quantity of leaves: 4 g / 1.2 tsp
  • Quantity of water: 70 ml / 1/4 cup
  • Water temperature : 80°C / 176°F
  • Steeping time : 60 seconds
