This is a very fine sencha from Sayama that was normal-steamed (futsumushi) rather than being deep-steamed (fukamushi), as is now most common in this area. It was made from the Yume-wakaba cultivar, a tea tree variety developed in the Sayama tea region and registered in 2006. In addition to being cold resistant, Yume-wakaba also has very recognizable fragrances that are enhanced when the leaves are wilted before they are steamed, as is the case with this sencha.
The infusion of these beautiful leaves affirms the cultivar’s reputation. We find fragrances of juicy yellow peaches and apricots with vanilla nuances. We also find the fragrances of sweet osmanthus, or fragrant olive, flowers. These rich, delicious aromas appear as much in the nose as on the palate. As for the aftertaste, it develops refreshing vegetal aromas that give depth to the taste.
The umami is present, but moderate and well balanced by a light astringency that gives it texture.
Exemplary on many levels, this sencha is powerful, yet fluid and, especially, very aromatic, all the while having a strong character.
