In 2010, the Izumi cultivar became emblematic of the Japanese black tea, “wakôcha,” boom. However, Izumi was originally intended for the production of kama-iri cha green tea. The cultivar was selected from seeds of the Benihomare black tea variety and was registered in 1963.
Rather than using the famous Izumi cultivar to make a black tea, it was used to make a sencha.
This fresh green tea is slightly vegetal fragrance and has butter, peach nuances.
On the palate, there is very little umami and a light yet pleasant astringency. The general aromatic impression is slightly vegetal, is creamy, and has ripe peach nuances. The aromas have a delectable length in the mouth.
In subsequent infusions, the astringency remains moderate, but the peach aromas are more present and have mandarin nuances.
This tea might not be lovers of all-things umami, but those looking for a complex, subtle sencha are sure to enjoy this sencha.
This very rich sencha is an example of the immense value that Izumi brings to a green tea.
