Tosa teas are teas harvested in Kôchi Prefecture on Shikoku Island. Rare and almost unknown to the general public, Tosa teas are nonetheless famous for their aromatic richness. It is also extremely rare to see a cultivar other than Yabukita from Kôchi, so finding a Sôfû it is already a lovely surprise. Most of all, this Sôfû cultivar sencha from Sakawa brings out very clearly the characteristics of this variety with Indian roots, which is an Yabukita, Inzatsu 131 cross.
This sencha has an intense sweet fragrance. And this fragrance is accompanied by aromas of jasmine and white grapes.
The infusion is very gentle on the palate, has a lot of umami, and is without astringency. The sweet sensation and grape, jasmine aromas appear here as well. The whole experience is very persistent in the mouth.
The second infusion remains very sweet, has umami, has very little astringency, and sees the jasmine aromas come to the foreground.
In the more refreshing third infusion, the jasmine fragrances with vegetal notes continue to dominate both the nose and the mouth.
This sencha perfectly conveys with force the Sôfû cultivar’s aromas. This is a very rich, intense tea that is also very accessible thanks to the near absence of tannins.
