Kôju is an original cultivar selected by the tea producer Takahashi Tatsuji from botanical variety (“zairai-shu” – grown from seed) tea seeds, probably of the “inzatsu” type.
This handpicked tea from Hon.yama is a oolong, which means it has been wilted and then allowed to lightly oxidize. This tea received a lot of attention and quickly became famous in the Japanese tea world for its unique fruity fragrance, recalling white grapes, peaches and also sweet citrus.
Infusion does indeed bring out incredible fragrances, fruity aromas that we continue to enjoy in the mouth, and then in the aftertaste. The liquor is light and refreshing, with no astringency, of course.
Kôju is among the rare varieties of Japanese tea trees that have completely unusual fragrances, very easily identifiable, but they come out like this only after wilting and processing as a oolong tea.
