One of the most remote tea-producing regions in Shizuoka is Umegashima, which produces mountain teas known as Hon.yama. Teas from this region are renowned for their special fragrances. Within this already remote region is the small town of Tomochi at 700-800 meters (2297-2625 feet) in altitude. It is uncommon to find a cultivar other than Yabukita from these mountains. Nonetheless, this is a Sayama-kaori with the best aromas of the variety.
This sencha has a very distinct fragrance of perfume with dried flower notes, reminiscent of a refined potpourri. There are also Chinese ink nuances. They appear in the very first attack in the mouth and are followed by floral nuances.
Unlike the reputation of Sayama-kaori to be bitter, this sencha is very gentle, sweet, has just the right amount of umami and no astringency. The texture is velvety and slightly thick. As with all fine teas from Hon.yama, the aftertaste is gentle, intense, aromatic and very long in the mouth.
The altitude and soil of Umegashima do wonders for this Sayama-kaori cultivar.
