Shizu-4006 is an extremely rare, unregistered cultivar that is part of the Shizu-4000 series of cultivars. The Shizu-4000 series were developed in the Shizuoka research center from crosses of tea tree varieties from Assam. Some of the cultivars in this series were registered, but they remain nonetheless very rare—as are the cases of Tada-nishiki (4018) and Hôryoku (4008). When it comes to this Shizu 4006, it serves as another example of Tenryû being a mountainous region with rare, ancient cultivars.
This is a tea that needs to be tried with different styles of infusions.
Initially, there is a sweet fragrance with dried herb notes and floral fruity nuances.
With almost no umami, Shizu-4006 develops more or less astringency depending on the style of infusion used. It also offers a wonderful sweet impression with a lot of body.
In the second infusion, the fragrance is more subtle and the fruity, floral aromas reappear both in the nose and on the palate. Citrus nuances accompany these aromas as well.
In the third infusion, the tea is very warm and the spicy floral notes are more prominent. But despite the astringency, the overall impression is always sweet and fruity.
It is, of course, possible to make the aromatic character of this tea appear right from the start. Doing so requires a very hot first infusion with modified parameters. However, the consequence of this style of infusion is that the tea loses the evolution of its flavours in subsequent infusions.
Of course, this tea is not for everyone. But we highly recommend this tea for those who know what they are getting into. Those who enjoy the intensity of sencha and who like to experiment are sure to enjoy this tea. We should also note that this tannic, yet very round tea has a notably strong, sweet aftertaste.
