Yame, in Fukuoka Prefecture, primarily produces shaded fukamushi sencha. In this case, the region gives us an unshaded fukamushi sencha, made using the very popular Saemidori cultivar. And to be more specific, this tea originates in Yabe village at 500 m (1640 ft) in altitude.
This sencha delivers a light, sweet, vanilla, vegetal fragrance.
It has a pronounced, yet delicate umami that heavily structures the experience in the mouth. The tea is particularly round, is sweet, and has velvety vegetal aromas. However, despite its characteristics, this is not a heavy sencha.
The aftertaste is particularly intense and persistent. Initially, the umami is predominant. But the tea then becomes greener and gains woody sensations.
Subsequent infusions are more fluid, while its retaining sweetness, cooked vegetable aromas and conifer nuances.
This fukamushi Saemidori is very round has pleasant sweet sensations, which are more prominent than the very strong umami. And, in the mouth, the strength of the persistence is also remarkable.
