Fukumidori is a cultivar originating in Saitama. Its ancestors are Yabukita and Sayama-midori. Beyond its features from the point of view of how and where it has been grown, it has its own special aromatic characteristics, in particular when the fresh leaves are subjected to wilting before the tea is made.
A slightly floral fragrance appears during the first infusion of this fine sencha from Sayama, made using a wilting process. The fragrance is primarily dominated by citrus grapefruit notes, and is accompanied by fresh mint nuances.
On the palate, this tea is very fluid, and slightly mineral. It has very little umami, an elegant touch of astringency, and a lightly sweet sensation. We also once again find the tea’s minty, citrus aromas.
With the second infusion, the fresh floral notes—characteristic of the wilting process—become more prominent. We find here a very deep vegetal impression and a humid sensation. The citrus notes remain present in the background. And this Fukumidori has a particularly refreshing character. This superb sencha was flawlessly produced, giving it an exquisite aromatic richness.
