Located to the northeast of Tokyo in Ibaraki Prefecture, Sashima is a small tea production region that is relatively unknown. However, there are many talented and dynamic tea producers who operate in this region. What better way to discover the terroir of a region than the Yabukita cultivar, the undeniable standard of Japanese tea.
This Yabukita sencha has a delicate, sweet, woody, nut fragrance with lightly vegetal tones.
In the mouth, the tea is very fluid. There is also a very noticeable astringency that is both mild and pleasant. The umami is initially discrete, but becomes very present at the end of mouth. Overall, the sensation is mineral, is fruity, and has a light vanilla flavour. This sencha is rich, is complex, and always remains nuanced.
Subsequent infusions deliver stronger fragrances, are even sweeter, and have floral, evergreen nuances.
This Yabukita from Sashima is powerful while always remaining fluid and refreshing. The tea’s richness and strength once again reaffirm the excellence of this great Japanese tea classic that is the Yabukita cultivar.
