Located on the outskirts of Shizuoka City, Uchimaki is an area where tea trees grow on slopes that are sometimes very steep and an area with short periods of sunlight, allowing Uchimaki teas to be naturally shaded.
An “Inzatsu” (Indian hybrid) cultivar, Sôfû is considered to be hard to grow because of its sensitivity to cold. However, in Uchimaki, the tea thrives because of the low elevation.
The infusion of this sencha has green, fresh, floral fragrances.
On the palate, this tea is very fluid refreshing despite the intense aromas. There are first sweet floral aromas with grape nuances typical of “inzatsu” cultivars, then fresh vegetal aromas appear.
This Sôfû has neither excessive astringency nor umami, except in the length, which simultaneously has umami and is sweet.
Sufficiently hot water should be used with this type of cultivar, including for the second and third infusions that should be very hot. This tea only develops a very light, pleasant astringency and the characteristic aromas of Sôfû remain very present.
