Ibaraki Prefecture, northeast of Tokyo, is a region that produces tea, even if this fact is relatively unknown to the general public. The region includes flatlands in the southeast with Sashima and more mountainous areas in the far north with Okukuji.
This sencha has a fresh, vegetal fragrance without becoming herbaceous. There are lightly sweet notes with discreet cooked potato nuances.
In the mouth, we find the strength of the Yabukita cultivar. While the umami clearly develops at the end in the mouth, the initial sensation is sweet, intense, and slightly astringent. The dominant aromatic sensation is somewhere between spring freshness and cooked green vegetables.
The aftertaste is sweet, is dense, is persistent, and has fresh aromatic herb nuances.
Subsequent infusions remain very intense, all while balancing sweetness and astringency.
A sencha for fans of teas with strong character that are representative of the terroir of Okukuji.
