Hokumei is a cultivar from Sayama Prefecture that was developed in the Saitama Prefecture research centre from a Sayama-midori cross. This is a late, cold hardy cultivar with a unique fragrance. As with other descendants of Sayama-midori, wilting Hokumei gives wonderful results.
This sencha from Sayama was wilted, producing a very strong floral fragrance that is accompanied by spicy notes and by a light impression of dried tomatoes.
In the mouth, the aromas are primarily by floral and have a milky sensation, giving a rather vegetal experience overall. Starting from the 2nd infusion, the floral aromas also have lavender notes.
Without being excessively astringent, this Hokumei sencha does not have any notable umami. The aftertaste is powerful and has great aromatic richness.
