Located in the mountainous region of the town of Shigaraki (Shiga Prefecture), Asamiya is a production zone. This zone produces ancient teas that are relatively unknown to the larger public but famous among experts.
The sencha we have here was made with Yabukita, one of the most widespread tea cultivars in Japan. Yabukita is a foundation with which to understand Japanese tea, and is still largely unmatched in terms of quality.
This Asamiya sencha starts with the sweet grilled hazelnuts and vanilla fragrances of great Yabukitas. Accompanying these fragrances, there are woody vegetal notes.
In the mouth, this tea is very balanced, is very round, has just the right amount of umami and has a very light touch of astringency. On the palate, it is very sweet, is delicious and has a mouth-watering persistence.
The woody vegetal notes are stronger as of the second infusion, while the sweet vanilla aromas remain very present. The astringency stays very discreet, delivering an infusion that is always very round.
This tea is simply sublime, and fans of sencha will find it hard not to love.
