The Sayama kaori cultivar is emblematic of Sayama teas from Saitama Prefecture, but the cultivar can also be found throughout Japan. This particular Sayama kaori was cultivated in Kawane at 600 metres (1970 feet) in altitude.
The intense sweet floral fragrances evoke violets and are so characteristic of Sayama-kaori that there is no room for doubt about the cultivar used. There are also baked potato notes.
Contrary to the reputation of Sayama-kaori, this tea has very little astringency. While the umami is moderate, the overall experience is delicate and sweet. In addition, the tea always remains very aromatic and always retains its characteristic floral notes.
The second infusion is also delicate and very fragrant, and it acquires cinnamon nuances.
This sencha has the distinct roundness that is common among Kawane teas and it also very clearly has Sayama-kaori’s unique aromatic characteristic.
