Fuji-kaori was selected from a cross between Inzatsu 131 and Yabukita, making this variety an Assam hybrid variety with poor cold resistance. This means the tea has a hard time growing in Ibaraki Prefecture, to the northeast of Tokyo. However, the producer works to delivers a good, lightly oxidized oolong. He also takes advantage of the strong aromatic characteristics of Fuji-kaori.
The first infusion is characterized by fruity aromas of candied peaches and apricots, which complement the tea’s roasting flavours. The tea also has slightly acidic berry nuances.
On the palate, we find again the same fruity, slightly roasted character and light floral touch. The infusion has volume.
The aromas undergo a pretty big change with the second infusion, and we now find both the characteristics of Fuji-kaori and of inzatsu varieties. There is also the bouquet that mixes floral jasmine notes and fruity white grape notes. Compared to the intense sweetness of the first infusion, the subsequent infusions are more fluid and subtle. In the mouth, the tea has a wonderful length that is accompanied by its incredible grape aromas.
This Fuji-kaori oolong tea delivers a rich experience and is a wonderful variation on the regular use of the cultivar.
