Developed in Miyazaki, the Minami-sayaka cultivar is particularly popular in the production of kama-iri cha and black tea. However, Minami-sayaka is also perfectly suited to producing sencha. In this case, the cultivar was shaded and deep steamed.
The sencha is richly fragrant and masterfully roasted. But it also has strong sweet milky fragrances, fruity peach nuances, and vegetal notes.
The attack in the mouth is rich, round, and very sweet. The umami is present, and the aromas fluctuate between sweet boiled green vegetable and summer fruit flavours.
Subsequent infusions have less umami and a hint of astringency. They are also more aromatic and the classic fruitiness are more pronounced.
A fine Minami-sayaka that gave a surprising sencha that—in the length—is enchanting with wonderful, very present, creamy, peach aromas.
Who would have thought that a shaded fukamushi would have such powerful aromas!
