This fukamushi sencha comes from Inasa, in Hamamatsu City in Shizuoka. It was made by the producer who—notably—also makes our Inzatsu 131 fukamushi. However, this particular Yamakai cultivar originates far from Nearai, in a remote tea garden in the mountains. The difficulty in accessing the tea gardens means it receives minimal maintenance. However, the sencha that comes out of there is one of the most interesting senchas, and quite different from what is normally expected in a Yamakai.
This Yamakai has a fragrance that is simultaneously intense, sweet, and lightly fruity.
In the mouth, the infusion is very fluid, is slightly sweet, and has no astringency. At the same time, the sensation is slightly thick. The unique buttery, fruity aromas also reappear in the mouth, and are followed by vegetal notes.
Subsequent infusions are a bit more astringent, but they retain the tea’s very aromatic sweet character.
This sencha is quite different from most other Yamakai teas. The tea’s sweetness was leveraged wonderfully and enhanced through a long, well-mastered steaming process.
