Tamakawa is a mountainous area deep in the heart of tea production region in the city called “Hon.yama,” located in northern Shizuoka. This sencha was produced by a young producer, who is different from the producer of the other Tamakawa teas we have on Aozuru-chaho Thés Du Japon. This particular Tamakawa was made using the Kanaya-midori cultivar—a variety registered in 1970—that has become widespread throughout Japan. In my opinion, it is difficult to use Kanaya-midori to make a very good sencha, but when it’s successful, we get a classic, rich, aromatic tea.
And here, we have a success. This mountain sencha delivers the fresh, vegetal fragrance and sweet, milky sensation expected of Kanaya-midori.
The liquor in the mouth cools with fluidity and voluptuousness. It is light and balanced, with a bit of umami and subtle astringency. There are also fresh woody aromas with a discreet hint of cream.
In the mouth, this sencha is persistent, sweet and creamy.
Subsequent infusions are just as rich, if not even richer. The woody impression is stronger and has clearer notes of conifers and damp earth. The creaminess is always present and the astringency is constantly very discreet.
Not satisfied to perfectly highlight Kanaya-midori’s characteristics, this sencha also has wonderful depth and elegance. The tea remains over the three infusions, which are always fluid and refreshing.
