This shaded, standard steamed sencha comes from Miyakonojô, in Miyazaki Prefecture. Little known to the wider public, Miyazaki is maybe the 4th or 5th largest tea producer in Japan. While Gokase and Takachiho are well known for kamairicha, the rest of the prefecture produces a lot of sencha.
This Oku-yutaka cultivar sencha delivers a light fragrance that mixes fruitiness and boiled algae aromas, hinting at the strength of the umami. The roasting adds even more to the delicate, sweet sensation.
This shaded tea’s umami are more prominent on the palate. This infusion is very delicate, is sweet, and has very persistent umami, reminiscent of the sweetness of a green vegetable soup.
Subsequent infusions are lighter and more refreshing, but—at the same time—the umami and delicateness of the tea remain very present. The aromas are also fruity, the tea never becomes astringent in any way.
A perfect sencha for fans of umami and slightly thick, delicate sencha.
