Kukicha tea is made from the stems of sencha that were obtained when sorting raw “aracha” tea during the finishing stage. The sorting is performed by a machine that separates the stems from the leaves by detecting the lighter green colour of the stems. In this case, the tea comes from a very early harvest, so much so that the raw tea has very few stems. There are also a lot very young buds, which sometimes turn white once dried. And it was the buds of these small fragments that were sorted. Thus, this tea composed of the fragments of buds, leaves, and delicate stems, making it very unique.
There is a very fresh, herbaceous fragrance, characteristic of green teas made with very young leaves. At the same time, we also find a sweet sensation with subtle smoky, floral notes.
In the infusion, the tea has umami and is lightly astringent. At the end in the mouth, we once again have an elegant herbaceous, sweet, fruity, floral impression.
While it was made using the usual process for kukicha, this tea is very different. It is an interesting and unique rarity.
