Kyô-Tanabe is often considered to be the Gyokuro production region in Uji most renown for the strength of its tea’s umami. However, the Shirakawa region in Uji is also highly respected for the depth of its tea’s fragrance. The Kyôken 283 cultivar was selected from an indigenous variety from Uji, but it was not registered. This gyokuro was handpicked in an unpruned “shizen-shitate” tea garden.
In the nose, this gyokuro is very delicate, has aromas of fruit in syrup, and surprising rose-like floral nuances. The fragrance is particularly refined.
In the mouth, the tea is clearly full of umami, but the umami is one that is very elegant, powerful, and is without heaviness. The aromas are vegetal, evoking cooked green vegetables, while also having floral nuances.
In subsequent infusions, the floral nuances are reduced, giving way to artichoke and spinach aromas.
This gyokuro never shows any astringency, always has its rich sweet persistence, and has a very richly aromatic sensation.
