In the mountain gardens of Kawane, at over 600 metres (1970 feet) in altitude, the famous Mr. Tsuchiya grows a number of different cultivars. They include Haru-midori, still very rare, a cross between Kanaya-midori and Yabukita, which seems to have inherited the complex fragrance of the former and the strength of the latter. This Haru-midori sencha from Kawane has been picked carefully by hand.
This fine sencha begins by offering a fresh, vegetal, slightly creamy fragrance.
The first sip places umami in the forefront, deliciously covering the palate. It is a very round, velvety tea, with, again, a vegetal impression highly typical of unshaded senchas.
This is a sencha that shows a very clear and interesting evolution in aromas between each infusion. While umami always remains very present, the second infusion is sweeter, evoking vanilla and almond. In the third infusion, more floral aromas appear.
This sencha from the mountains of Kawane is a very fine high-quality tea, powerful and complex, with a wealth of aromas and the umami characteristic of Japanese steamed green teas.
