Cultivar and technical information
At more than 700 m (2296 ft) in altitude, the town of Ôma is located on the Warashina River, very far upstream of the region for Hon.yama teas.
Yamakai is a lightly early cultivar selected from Yabukita seeds Shizuoka Prefecture research centre and was registered in 1967. While the cultivar’s unique aromas were for a long time ill-favoured by the tea industry, it is now, however, considered a unique tea that is appreciated by enthusiasts.
The nose
This infusion of this fine, strongly roasted mountain tea from Shizuoka offers the sweet, slightly oily fragrances of candied raspberries and roasted wafers that only Yamakai can deliver.
The mouth
The liquor of this tea is delicate and sweet. It also has a moderate umami and an almost inexistent astringency. The aromas of Yamakai are again very present with the scents of raspberries and juicy melons, and with a woody sensation. On the palate, this sencha has a long, intense aftertaste.
In subsequent infusions, the sweet aromas are also present with something woody as well. Always without any astringency, the tea keeps a certain intensity while gaining fluidity.
Summary
It has all the depth of a mountain tea, making it an archetype of the Yamakai cultivar’s aromatic richness.
