The Fuji-kaori cultivar was developed in Fujieda by Mr. Morizono Ichiji and the producer Koyanagi Mitsugi. This cultivar came from a seed that resulted from crossing the Inzatsu 131 variety with Indian origins and the Yabukita variety. It is renowned for fragrances evoking jasmine.
While this kama-iri cha clearly has fragrances characteristic of Fuji-kaori, it is not always the case with senchas of this cultivar. Fuji-kaori senchas with these distinctive aromas are generally quite rare.
Thanks to a technique of wilting before steaming, it is able to bring out sweet, floral, jasmine fragrances in the nose and even more so in retro-olfaction. It is especially with the second infusion that this becomes apparent.
On the palate, this sencha has a lot of volume. It is a robust tea with astringency that remains moderate. There is also a certain umami in the background. The aromas here are likewise floral and characteristic of this Inzatsu cultivar.
Finally, while still having the aromatic characteristics of this cultivar, this Fuji-kaori sencha is not too typical. This is a tea with body that is wonderful in hot infusions and is sure to please fans of deep, stimulating senchas.
