Cultivar and technical information
Kawane is one of the famous mountain tea production zones in Shizuoka and is located upstream of Ôi-gawa River.
Like Yamakai (Shizu-7166) and Kurasawa (Shizu-7111), Shizu-7132 is part of the Shizu-7000 series of cultivars. Cultivars in this series were selected at the Shizuoka Prefecture research centre from Yabukita seeds. However, Shizu-7132 was never registered, and does not have a name. In Shimizu, it is sold under the name Machiko. The cultivar is famous for its distinct fragrance that is reminiscent of the pickled cherry tree leaves that used to make the Japanese confectionery, sakura-mochi. This distinct fragrance is the result of a high coumarin content.
The nose
This sencha delivers exquisite fragrances, and we very clearly recognize the pickled sakura leaf aromas in the nose. There are also notes of nutmeg and spicy cinnamon.
The mouth
The confectionery aromas all appear again in the mouth, but they are accompanied by almost minty nuances. With a bit of astringency and relatively present umami, this delicious sweet sencha delivers a finish in the mouth that is rich in the unique sakura-mochi aromas.
Subsequent infusions continue in the same trend, always very aromatic, but more refreshing.
Summary
This sencha from Kawane is already a very elegant tea that was expertly crafted. We also find complex aromas, recognizable amongst thousands as being from the Shizu-7132 cultivar.
