Shizu-7132 is a variety known for its fragrance, which evokes the Japanese sweet known as “sakura-mochi”, a rice-and-bean treat that is wrapped in a brined cherry tree leaf. The dry leaves of this fukamushi do indeed have a perfectly captivating, mouth-watering sweet scent.
Infusion brings out the unique, sweet, velvety fragrance, with just a tiny hint of acidity. In the mouth, the first infusion is restrained and light, without the heavy, thick character of too many fukamushi chas. There is no astringency, but very light umami and above all the confectionary and floral aromas, which dominate in retro-olfaction.
The following infusions have much more oomph, a slightly tannin texture and aromas of leather that combine with the sakura-mochi fragrance. At this point, this tea truly feels like a fukamushi, but it is still fluid and not heavy, despite a certain density.
This fukamushi sencha is very original and unique, aromatic and powerful. We recommend that those who enjoy very special teas try tasting it in parallel with the Inzatsu 131 from Nearai by the same producer.
