Yamakai is a variety that we are special fans of at Thés du Japon. Unfortunately, it is becoming more and more rare, and is almost nowhere to be found outside of Shizuoka. It is with immense pleasure that we are offering an unshaded Yamakai sencha grown at an altitude of 550 m (1800 ft) in the village of Yabe in Yame.
This year, this relatively deep steamed Yamakai from Yame has distinguished itself with its very strong scents of roasting, starting with dry wood and roasted nuts. These aromas dominate the mouth at first, but then the notes become more fruity and then also more vegetal. The fruity tones are reminiscent of raspberry jam, an aroma characteristic of very strongly roasted Yamakai.
This sencha has moderate umami, and is never astringent.
The aftertaste is sweet, powerful and long.
This is a robust sencha, with powerful roasting fragrances that are slowly replaced by the aroma of sweet berry jam.
