Cultivar and technical information
In terms of tea production, Hon.yama refers to the more or less mountainous region located to the north of Shizuoka City, along the Abe and Warashina rivers. Takayama—where this tea originates—is a mountainous region in Ushizuma that is relatively downstream on Abe River. The tea garden of this Yamakai sencha is located at around 450 m (1476 ft) in altitude.
The Yamakai cultivar was selected from Yabukita seeds and registered in 1967. There was a period where Yamakai was a recommended variety from Shizuoka Prefecture, but it has been progressively forgotten over time. However, Yamakai nonetheless has very interesting aromatic characteristics.
The nose
This sencha delivers a delicate, yet complex fragrance with notes of fresh melons, raspberry jam, and grilled wafers.
The mouth
The initial attack is light and has a velvety sensation. We find a subtle hint of astringency that quickly gives way to rich sweet aromas of raspberries and roasted nuts. At the end in the mouth, there are also creamy notes.
In the length, there is a wonderful, sweet persistence and umami. This Yamakai sencha also shows itself to be decently powerful.
Subsequent infusions remain velvety and aromatic.
Summary
This is a very representative mountain Yamakai. While being very accessible, this sencha is also sure to please connoisseurs with its depth.
